Ingredients
  

Dry ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt

Wet ingredients

  • 1/2 cup unsalted butter melted and slightly cooled
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 3/4 cup apple cider
  • 1 teaspoon vanilla extract

Apple mix-ins and finish

  • 1 1/2 cups apple peeled and finely chopped
  • 1 tablespoon all-purpose flour for tossing with apples
  • 1 tablespoon coarse sugar optional, for topping
  • 1 tablespoon powdered sugar optional, for dusting

Instructions
 

  • Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper if desired.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, whisk the melted butter and brown sugar until smooth. Add the eggs, apple cider, and vanilla, and whisk until combined.
  • Toss the chopped apple with 1 tablespoon of flour.
  • Add the dry ingredients to the wet ingredients and stir gently just until combined. Fold in the floured apples.
  • Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle with coarse sugar if using.
  • Bake for 50 to 55 minutes, until golden brown and a tester inserted in the center comes out clean or with a few moist crumbs.
  • Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before slicing.

Notes

Use a firm apple like Honeycrisp, Fuji, or Gala for the best texture. Do not overmix the batter. Tent loosely with foil near the end of baking if the top browns too quickly. Nutrition values are estimates.
