Equipment

  • 1 oven-safe baking dish small, sized to fit the brie wheel
  • 1 spoon for topping the brie
  • 1 oven preheated to 350°F

Ingredients
  

For the baked brie

  • 1 wheel brie cheese about 8 ounces
  • 1/3 cup fruit chutney such as mango or apricot
  • 1/4 cup almonds chopped
  • 1 teaspoon olive oil or melted butter for greasing the dish

For serving

  • 1 box crackers or sliced baguette
  • 1 cup green grapes for serving
  • 1 cup strawberries for serving

Instructions
 

Prepare and bake

  • Preheat the oven to 350°F. Lightly grease a small oven-safe baking dish or line it with parchment for easy cleanup.
  • Place the brie wheel in the baking dish, leaving the rind on.
  • Spoon the chutney evenly over the top of the brie and sprinkle with the chopped almonds.
  • Bake for 12 to 15 minutes, until the brie is very soft in the center and the topping is warm and glossy.
  • Remove from the oven and let rest for 3 to 5 minutes.

Serve

  • Transfer to a serving plate if desired and serve warm with crackers, grapes, and strawberries.

Notes

Leave the rind on so the brie holds its shape while baking. Watch closely near the end and remove when soft but not collapsed. You can assemble with topping a few hours ahead and refrigerate until ready to bake.
