Equipment

  • 1 Cutting board
  • 1 Chef's knife
  • 1 large mixing bowl
  • 1 small bowl or measuring cup for whisking dressing

Ingredients
  

For the Salad

  • 6 cups ripe tomatoes chopped
  • 1/4 cup red onion finely diced
  • 1/2 cup fresh basil leaves torn or roughly chopped

For the Dressing

  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon black pepper freshly cracked

Instructions
 

Prepare the Salad

  • Wash and dry the tomatoes and basil. Chop the tomatoes into bite-size pieces and place them in a large mixing bowl.
  • Finely dice the red onion and add it to the bowl with the tomatoes. Tear or roughly chop the basil leaves and set aside.

Make the Dressing

  • In a small bowl or measuring cup, whisk together the olive oil, balsamic vinegar, kosher salt, and black pepper until combined.

Assemble

  • Pour the dressing over the tomatoes and onion. Add the basil and gently toss until evenly coated.
  • Taste and adjust seasoning if needed with more salt or a small splash of balsamic vinegar.
  • Serve immediately, using a slotted spoon if desired to leave excess juices behind.

Notes

Use the ripest tomatoes you can find for the best flavor. For a milder onion taste, soak the diced red onion in cold water for 10 minutes and drain well. This salad is best served shortly after tossing.
