Equipment

  • 1 large skillet for cooking the beef and toasting the wraps
  • 1 mixing bowl for the sauce
  • 1 spoon or whisk for mixing the sauce
  • 1 spatula or wooden spoon for breaking up the beef
  • 1 Cutting board for prep and slicing

Ingredients

For the special sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

For the beef filling

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

For assembling

  • 4 large flour tortillas
  • 1 1/2 cups shredded iceberg lettuce
  • 1/3 cup white onion diced
  • 1/2 cup dill pickles chopped
  • 4 slices American cheese
  • 1 tablespoon butter or oil for toasting

Instructions

Make the sauce

  • In a small bowl, stir together the mayonnaise, ketchup, mustard, relish, white vinegar, garlic powder, and paprika until smooth. Set aside.

Cook the beef

  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small crumbles as it browns.
  • Season the beef with salt, black pepper, onion powder, and garlic powder. Continue cooking until fully browned and no pink remains. Drain excess grease if needed.

Assemble the wraps

  • Lay the tortillas on a work surface. Spread some of the special sauce over the center of each tortilla, leaving space around the edges.
  • Divide the warm beef among the tortillas and top each with a slice of American cheese.
  • Add the shredded lettuce, diced onion, and chopped pickles. Drizzle with more sauce if desired.
  • Fold in the sides and roll each tortilla tightly into a wrap.

Toast and serve

  • Return the skillet to medium heat and add the butter or oil. Place the wraps seam-side down in the skillet.
  • Toast for 2 to 3 minutes per side, until the tortillas are crisp with deep golden-brown marks and the cheese is melted.
  • Let rest for 1 minute, then slice in half and serve warm.

Notes

Do not overfill the tortillas or they may split while toasting. Warm stiff tortillas briefly before rolling. Store beef, sauce, and fresh toppings separately for the best leftovers.
