Ingredients
  

For the yogurt base

  • 1 cup plain nonfat Greek yogurt
  • 1 teaspoon honey or maple syrup optional
  • 1/4 teaspoon vanilla extract

For the caramelized bananas

  • 1 medium ripe banana sliced into coins
  • 1 teaspoon unsalted butter or coconut oil
  • 1 teaspoon maple syrup or honey
  • 1/4 teaspoon ground cinnamon

For topping

  • 2 tablespoons chopped walnuts or pecans
  • 1 teaspoon maple syrup or honey optional, for drizzling
  • 1 pinch flaky salt optional

Instructions
 

Make the yogurt base

  • In a small bowl, stir the Greek yogurt with the vanilla extract and the optional honey or maple syrup until smooth and creamy.

Caramelize the banana

  • Heat a small nonstick skillet over medium heat. Add the butter or coconut oil and let it melt.
  • Add the banana slices in a single layer. Drizzle with the maple syrup or honey and sprinkle with the cinnamon.
  • Cook for 1 to 2 minutes, then gently flip and cook for another 1 to 2 minutes until the banana slices are glossy, golden brown, and lightly caramelized around the edges.

Assemble the bowl

  • Spoon the yogurt into a serving bowl and smooth the top.
  • Arrange the warm caramelized banana slices over the yogurt and spoon any syrupy bits from the skillet on top.
  • Finish with chopped nuts, an extra drizzle of maple syrup or honey if desired, and a pinch of flaky salt. Serve immediately.

Notes

Use a ripe banana with a few brown speckles for the best caramelization. Fresh bananas work better than frozen here. The bowl is best served right away while the bananas are still warm.
