Equipment

  • 1 baking sheet or mini muffin pan for stability
  • 1 knife for cutting brie
  • 1 Cutting board
  • 1 Small spoon for drizzling maple syrup

Ingredients
  

For the bites

  • 24 frozen mini phyllo pastry shells
  • 8 oz brie cheese cut into small cubes, rind trimmed if desired
  • 6 slices bacon cooked crisp and finely chopped
  • 2 tbsp pecans chopped

For finishing

  • 3 tbsp pure maple syrup
  • 1 tsp fresh thyme leaves optional
  • freshly cracked black pepper optional, for serving

Instructions
 

Prepare and bake

  • Preheat the oven to 375°F. Arrange the frozen mini phyllo shells on a baking sheet or in a mini muffin pan.
  • Cut the brie into small cubes sized to fit inside each shell.
  • Place one cube of brie into each pastry shell.
  • Top each shell with a small pinch of chopped bacon and a few bits of chopped pecans.
  • Bake for 15 to 18 minutes, until the pastry shells are golden and the brie is soft and melted.

Finish and serve

  • Let the bites rest for 2 to 3 minutes after baking.
  • Drizzle lightly with maple syrup while warm.
  • Finish with thyme leaves and a little black pepper, if desired, and serve warm.

Notes

Do not overfill the shells or the pastry can soften. For best texture, drizzle the maple syrup after baking and serve warm. You can prep the bacon and brie ahead of time and assemble shortly before baking.
