Ingredients
  

For the yogurt bites

  • 1 cup plain Greek yogurt thick style preferred
  • 1/3 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

For topping

  • 1 tablespoon creamy peanut butter for drizzling
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons finely chopped peanuts

Instructions
 

  • Line a small freezer-safe tray, plate, or container with parchment paper.
  • In a medium bowl, stir together the Greek yogurt, 1/3 cup peanut butter, honey, vanilla extract, and salt until smooth and evenly combined.
  • Scoop the mixture into 12 small mounds on the prepared tray using a small cookie scoop or spoons.
  • If needed, warm the remaining tablespoon of peanut butter briefly so it loosens, then drizzle a little over each bite.
  • Sprinkle the bites with mini chocolate chips and finely chopped peanuts, pressing lightly so the toppings stick.
  • Freeze for about 2 hours, or until the bites are firm enough to lift from the parchment.
  • Transfer to an airtight container and keep frozen until ready to serve. Let sit at room temperature for 1 to 2 minutes for a softer texture if desired.

Notes

Use thick Greek yogurt for the best texture. Let the bites sit out briefly before serving if they are too firm. Store in an airtight container in the freezer for up to 2 weeks.
