Equipment

  • 1 food processor for whipping the ricotta smooth
  • 1 sheet pan for toasting the baguette slices
  • 1 serving bowl shallow bowl works well

Ingredients
  

For the whipped ricotta

  • 2 cups whole milk ricotta cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

For topping and serving

  • 2 to 3 tablespoons honey for drizzling
  • 1 tablespoon fresh herbs chopped, such as thyme, chives, or parsley
  • 1/8 teaspoon black pepper extra, to taste
  • 12 slices baguette toasted
  • 1 teaspoon lemon zest optional, for finishing

Instructions
 

Prepare the bread

  • Toast the baguette slices until lightly golden and crisp around the edges. Let them cool slightly.

Make the whipped ricotta

  • Add the ricotta, olive oil, lemon juice, salt, and black pepper to a food processor.
  • Blend for 1 to 2 minutes, scraping down the sides as needed, until the ricotta is very smooth, airy, and fluffy.
  • Spoon the whipped ricotta into a shallow serving bowl and create soft swirls on top with the back of a spoon.

Finish and serve

  • Drizzle the honey over the dip so it settles into the swirls.
  • Top with chopped herbs, extra black pepper, and optional lemon zest.
  • Serve immediately with the toasted bread on the side.

Notes

Drain very wet ricotta before blending for the fluffiest texture. Make the dip up to 1 day ahead and add honey and herbs just before serving. Serve with toasted baguette, crackers, or fresh vegetables.
